I think I actually prefer my steak a true medium, but if the kitchen screws it up I'd rather they go under than over, so I usually order medium-rare.

I have posted this before, and CdM was highly critical of the opinion, which is unfortunate because it is so correct. :(

The answer depends on the cut of meat. For example, I think a new york strip is best medium rare, a filet medium rare to medium, and a sirloin medium well.

One of my concerns with ordering less than medium rare is that it tends to get cold rather fast, as it has been for such a short time in the grill. I guess that smaller cuts are the better suited to be ordered rare, right?

At home: medium to medium well.
At restaurant: well done, so I get it medium.

I won't be bothered if it's well done, but I'll hate it if they serve me a rare steak, or any meat rare.
That's what I hated the most from a trip to France, can't cook their meat.

Historically, I've preferred the more well-done end of the spectrum, since that's what my family liked, but I've absorbed the idea that rarer is culturally superior, and have probably been influenced to move in that direction to some extent.  So I would ask for "medium" probably, but the few times I've had steak in restaurants (not steakhouses), "medium" has looked more like "medium-well" on that chart.  At home, I've experimented mostly with cheap cuts cooked in a pan, and a true "medium" would be my aim at this point.  But I've enjoyed it rarer as well, and might get more out of that if I was using a more expensive cut and/or grilling it.

Mom's anxiety closet was large enough even before she became an RN, so salmonella, tapeworms and E. coli were fears that she went well over the top about--which is why we were raised on broiled beef and chicken breasts overcooked and additional 30 minutes until they were the consistency of hockey pucks.

Yeah, for the cheaper cuts of meat I recommend that you marinate them for a long time (a day or so) and then cook them to medium.  For the better cuts medium rare is the way to go.  Unless you don't care about tasting the meat.  Then go well done and put a bunch of steak sauce over it.

A trained chef in a professional kitchen shouldn't have much trouble getting steaks cooked properly almost every time.

Nah, I order medium rare but get well-done all the time.  It is easy to do when you cook one steak.  When they get 30 orders at the same time, they screw up.

Most often iy is a misunderstanding about what the terms mean to different people.

Yeah, it is actually pretty hard to get a steak cook time wrong.  If a medium rare steak is served medium or medium well, someone in the kitchen really messed up.

I was thinking more Bohanan's (they don't screw it up ever) vs a chain steakhouse joint like Longhorn or Logan's or something (they're off a little sometimes and it's nbd). 

I don't think I've ever had anyone torch a steak when I've asked for medium rare, although somewhat related, I've gotten a burger at Chili's that essentially wasn't cooked at all even after asking for well done because ground beef.  I didn't eat that.  Gross.

I did take a bigass bite of that thing when I got it.  It was seared, or at least cooked looking, on the outside, but just light red/pink cold ground beef on the inside.  Not good times.

I've also opened up and tossed back half of one of those little boxed of milk that was spoiled on the ship before I spit it out all over the place.  It was chunky.  My roommate said he couldn't decide whether to puke or laugh at the look on my face.   :lol:  I should probably....I dunno....at least do more than glance at things before I start eating or drinking them. :hmm:

It really is.  I haven't set foot in an Applebee's since the GF's mother got food poisoning twice from the steak.  It's overpriced, oversalted, undercooked, underflavored, and every drink from the bar to the soda fountain is so watered down it's disgusting.  The only chain worse, IMO, is TGI Fridays.  Famous Dave's also had a massive salt issue when I tried it, but I haven't been back to see if that was a one-off.

Everything is fucked at Applebee's.

It really is.  I haven't set foot in an Applebee's since the GF's mother got food poisoning twice from the steak.  It's overpriced, oversalted, undercooked, underflavored, and every drink from the bar to the soda fountain is so watered down it's disgusting.  The only chain worse, IMO, is TGI Fridays.  Famous Dave's also had a massive salt issue when I tried it, but I haven't been back to see if that was a one-off.

If one is going out to a restaurant in that same 'quality/price' bracket, one's choice should never be Applebee's.

I actually rather like the Outback in Rochester. I've been consistently pleased with the quality of their food and its preparation and service.

It isn't up to a real steakhouse standards, of course, but I can feed my family of 4 for about $60, and get very good steak properly prepared. I can only feed myself for that amount at a real steakhouse.

The Outback within walking distance of my house does a decent job on steaks.  Actually it seems like the cheaper the cut, the better job they do on it.

Yeah, no kidding. In fact, all the middle tier chains that are NOT the Outback seem to be Texas themed...

As far as the Outback, it is just the theme. It doesn't really "mean" anything. Anymore than going to Johny Rockets means you are an 50s astronaut, or going to Planet Hollywood means you will get food from Hollywood. It just defines the theme.

Yeah.  There is/was a Texas themed steakhouse in Guam (Texas Roadhouse maybe?) that got real weird when they had their servers come out all cowboy-ed up (hats, chaps, etc) to...like.....line dance.   :lol:  I've never been to one here, but I'm assuming that's a thing with that particular chain vs a strange form of waitstaff abuse.

"steak" is associated with the wild west and ranching / cowboys.  The Outback is Australia's "wild west".  It's foreign enough to differentiate itself in a crowded market, but safe enough to not feel threatening.

Texan/cowboy steakhouses are pretty rare around here. They are seen as too tacky and if one wants to open and American steakhouse they usually aim for a California/NE theme.

Most common steakhouse around here is the Argentinian steakhouse, though.

Most often iy is a misunderstanding about what the terms mean to different people.
nearly all the restaurants I have gone to in Quebec had a tendancy to undercook the steak, and according to the chart in post #1, I am right on my definitions :)
Ordering a medium steak gives me a rare steak, so I usually order it well done to get a medium/medium well.
I think there's only one place in Quebec city I can order a medium and get it medium and it's not even a steakhouse.

You know, sushi is pretty strongly linked to Japanese culture, but fried chicken is fairly ubiquitous.  I'm pretty sure that because chicken is Halal, fried chicken is popular in the middle east.  You could totally get away with doing Egyptian Fried Chicken.

Over here in my neck of the woods steakhouses and grills, if they do have a theme, it's Argentinian/Uruguayan, but that's mostly because they're run by people from there. Not a single US themed steakhouse that I'm aware (although we do have a diner style chain with burgers, milkshakes and waitresses in bright pink and blue 50s uniforms).

Over here in my neck of the woods steakhouses and grills, if they do have a theme, it's Argentinian/Uruguayan, but that's mostly because they're run by people from there. Not a single US themed steakhouse that I'm aware (although we do have a diner style chain with burgers, milkshakes and waitresses in bright pink and blue 50s uniforms).

Same here, really. Argies rule Catalan steakhouses - and besides the ones ran by people from there, we do have fakes. We also have a modicum of American-themed ones.

They recently opened a 1950s-themed diner in downtown Barcelona. Looks totally straight off American Graffiti. Decent food, too.

There's a hoity-toity Argentinian place here that does that, bringing the meat directly from the pampa or somesuch. They charge a pretty penny but it's very good, my parents like to go there like once or twice per year, mostly for celebrations. The one we go much more often to is run by Uruguayans and it's much more "proletarian", so to speak, but also quite nice, and we go there a lot for family lunches.

Yeah, Brazillian steakhouses are a thing up here as well.

Unlike Outback though they do that kind of "all the meat you can eat" style service in Brazil.

Pretty much.  There's no shortage of Texas-themed steakhouse chains.

Late, but this.  For illustration, in the closest shopping hub "city" to me, there are a Chili's and a Longhorn Steakhouse next door to each other, with a Texas Roadhouse across the street, and until it closed, a Bob Evans next door to that.  Even the lowest common denominator of (non fast-food) "American" cuisine, Denny's, tries to cash in on the "southern/southwestern steakhouse" thing.

You know, coming back to this thread, it occurred to me there are several Canadian restaurant chains that, to one degree or another, all trade on a theme of being from somewhere else, even though in truth they are 100% Canadian.

Boston Pizza - doesn't have anything Boston-related in it's interior or menu, but the name itself - it has zero ties to the city of Boston (started out in Edmonton in fact).

Swiss Chalet - they serve rotisserie chicken meals.  There's nothing "Swiss" about it though, other than a vaguely chalet-inspired decor.

Eat Side Mario's - It's Italian-American food, with heavy, heavy New York City-inspired decor.  There logo used to be the Statue of Liberty holding a tomato.

Montana's Cookhouse - decor isn't specifically "Montana", but very heavy on exposed log construction, dead animals on the wall.

New York Fries - a staple of Canadian mall food courts.  Not really any "decor", but advertisements used to have a strong NYC taxi-cab theme to them

There are also chains that serve asian food, like Thai Express, Edo Japan, Panda Express, Mandarin.

- Foster's Hollywood: burger and grill place. Theme obvious from the name.
- TGB (The Good Burger): New York-themed burger place.
- Timesburg: same as above. Actually some great burgers.
- Cup & Cake: hipster themed (really) coffee shop.
- Barba Rossa Beach Bar: biker/americana burgers and ribs. Extremely tacky  :lol:
- The Good Bagel: NY themed bagel place. Not related to TGB. Closing down nowadays which sucks since I love bagels.
- Tommy Mel's: 1950s diner
- Peggy Sue's: same as above, but "softer" themed.
- Ribs: Texan (as in cowboys and shit) BBQ place.
- Surf House: Cali/surfer theme, burgers, salads and cocktails.

Note that Barcelona is the hipster capital of Spain, so our tastes then to gravitate towards that area. Hipster/Brooklyn looking coffee places are dime a dozen.

Can't think of any steak house chains part from the Aberdeen Angus ones which only tourists eat at.

There are a few high end mini-chains (with maybe 10 outlets or so).

The big trend at the top places is for steak from old (8 year plus) dairy cows, mainly from Spain especially Galicia. Not tried it myself but looking forward to doing so.

Burgers are a major thing for hipsters these past few years.
Which is curious as they're also traditionally down there with kebabs in the crappy and possibly poisoned cheap food sold by hairy Middle Eastern guys brigade.

Surely they must see the effect having a fashionable young guy serving and nice decor has. The amount you can mark up the prices by....

Alas in Switzerland most of this stuff has passed us by. Our latest thing is kebab shops selling tacos. Wow.

For steak my work canteen does it at a pretty decent and affordable price. It keeps my cravings under control.
