Salami by definition is smoked / pre-cooked, so it's not "raw" at all.  You can eat it cold, or re-heated/warmed/whatever.  The casing may be natural or artificial but both can be eaten (or removed if you prefer).  It's it's a pure inedible plastic you can tell right away - only time I've ever seen that is on hotdogs, and the plastic wrap has printing on it to make it pretty obvious you don't want to eat it.

A raw sausage is pretty obviously raw by how soft and squishy it is.

Well yes, because there are many more kinds of cured sausages than just salami.

I can not for the life of me think of a "soft and squishy" cured sausage, but I guess I'll take your word for it.......

Its actually my favourite kind.  The hard sausage is also good of course, but I find the softer cured sausages more flavourful.  Perfect to go with some soft cheese, crusty bread, some fruit, and wine.

Aren't bologna and mortadella basically the same thing?  Just a champagne / sparkling wine kind of thing?  Anyways it's definitely cured.  And definitely firmer than a raw sausage.

Head cheese you've got me.  It's jellied.  It would be soft, I'm positive it's safe to eat without cooking (in fact the jelly would break apart under heat) but don't know if that counts as being preserved.  No way you'd mistake head cheese for a raw sausage though.

Yeah I think bologna is the Italian-American version of mortadella (edit: which comes from the city of Bologna - hence the name change when it got to the US).

Headcheese meat is precooked (boiled, so be careful viper :P ). In traditional methods gelatine is obtained through the cooking process (pig skin) but most is now just added.
Being lazy is bad; unless you still get what you want, then it's called "patience".

One other thought on this point:

AT least on this side of the pond raw sausages are sold amongst the other raw meats.  Any cured or preserves sausage is sold in the deli or similar section (presumably because you don't want to cross-contaminate your raw and cooked food).
