Dept of Health had them closed for a year or so, but with some bribes they have reopened.

(Valmy, I was actually thinking a Southwest Airlines to Denver would be cheaper and faster...)

Edit:  This reminds me (and PMs suck).  HEY BERKUT!  If you see this, tell me about attending University of Arizona football games.  Is it difficult to get tickets? Which sections are good for visiting fans if they can't necessarily sit near their own kind, but don't want to be harassed constantly?  It's for science, you see....:ph34r:

It looks like I can fly to Denver and back at about half the price it would cost me to fly to Laramie and back.

Of course that creates the dilemma of how to get from Denver to Laramie :P

My Uncle lives in Denver so I will ask him.

I have several :blush: there is a big Chili making competition every year and I always find a few new ones.

But here is the classic one:

grind coarsely. Add to the hot fat and brown. Add the garlic, salt,
pepper
and chili powder.Mix well and allow the spices to permeate the meat. Add
the masa harina and stir in well to blend. Add the water, vinegar, beef
base and the extra chilies. (You may substitute beef broth for the water
and beef base, to reduce the sodium). Allow to simmer until the meat
begins
to disintegrate. Cool to room temperature and  refrigerate. Remove
hardened
grease from the top, if any collects. Reheat and serve with a side of
pinto
beans, minced white onion for a garnish. Also serve tortillas, tortilla
chips, corn bread or saltine crackers as a bread.

My usual chili is made AS FOLLOWS:

1.  Brown 1 lb. ground beef with 2 cups diced onions (the onions and beef go in at the same time).

2.  When beef is browned, add tomato sauce/paste*, a cup of salsa, like ten teaspoons of chili powder, about a teaspoon of red pepper flakes, a teaspoon of cayenne pepper, and a teaspoon of black pepper.

3.  Blend all of that together, then add a can of light red kidney beans, and a can of dark red kidney beans.

4.  Bring to a boil and then simmer for as long as possible.

5.  Serve over cooked spaghetti with shredded cheddar and corn chips on the side.


* for some annoying reason Princesca insists on a full can of tomato sauce, but I like my chili less tomatoey and if she's not around to bug the shit out of me about it I only put in a little can of tomato paste

2. Chop the onion, pepper, and carrots and saute them in the roux until the onion is soft and clear (took me around 20 minutes.  Your mileage may vary).

3. Puree the sauted onion / pepper / carrots / roux in a blender, and set aside.

4. Brown and drain the ground beef.

5. Combine the drained ground beef, the pureed onion / pepper / carrots / roux, the spices, and the kidney beans.

6. Cook for 30 minutes covered over low to medium heat.  Add water as necessary if it begins to stick.  Stir occasionally.

7. Cook uncovered over low to medium heat as long as needed to thicken the chili to the desired texture (the reverse of the adding water stage).

Valmy's recipe has masa, yes.  Cornmeal doesn't form a good roux, though, so I wouldn't suggest it; masa should be ok.

I liked it just fine without beans but I did stir some in later.  :blush:

Anyway, I took pics of Valmy's chili I keep forgetting to post.  It literally looks like a bowl of dog shit, but tastes great.  :)

Making chili this weekend for the football game at Alci's. Corn bread, too. May have to dip into Valmy's recipe to see how the Masa Harina does with my recipe.

It will thicken it up considerably, so keep that in mind if you use other thinkening starches for your chili.  Also, it adds a strong overtone of corn to the flavor.
