New France was the entire area controlled by France in North America.  The area we're discussing was known as the Province of Canada.

Moreover, you're forgetting to take into account that the 63% increase in population was caused by a large increase in investment and immigration from France, which would obviously not continue past the Fall.

Irrelevant.  The trapping population of the inland and north and the small cluster around the Mississippi delta could easily add up into the thousands.
