Regarding veal vs. pork schnitzel - yes, traditionally veal is considered "the" schnitzel, but pork schnitzel is well accepted as also being "original" these days.

Which is why it's usually called "Bröslfetzen" (crumb rag). And why you get lemon and (usually) lingonberry sauce. :P I prefer Cordon Bleu myself. Expertly done it's crispy outside, and the ham/cheese inside keep it juicy. Or I just go for a chicken schnitzel. :D
