Title: Recipes for Quinoa

Today I bought a pound of quinoa from the local food co-op because I heard that it's supposed to be some kind of wonder food, especially for dieters. (Filling, healthy, and chock full of protein.) The only problem is that I've only ever cooked quinoa once - 15 years ago. I need recipes.

I've tried cooking with it a good bit. The healthy part is true. The filling part is not true. You need to pair it with things that have flavor and body, because it has neither on its own. Some of my better experiments involved putting it in salads and stuff like that.

I cook Quinoa a couple times. It is very easy to cook.

I didn't like it. I found it didn't mesh well with my diet. The flavor was just fine though.

Then I'm out of ideas lol. Although I do recommend, if you don't already use them, whole grain and hulled barley rather then pearl. I think you can use barley with the hull too, but I don't know how apatizing it would be.

Made a quinoa pudding tonight. I really liked it. Recipe is as follows. I made it up as I went, so measurements are approximate:

1 c Quinoa
1 T vegetable oil
1 c water
1 c milk
1 t vanilla
1 t ground cinnamon
2 T sugar

Rinse quinoa thoroughly for two minutes. Heat oil in sauce pan over medium-high heat. Add quinoa to saucepan and cook, stirring often, for about 10 minutes. Add water, milk, and vanilla. Bring to boil, lower heat to low, cover, and let simmer for about 30 minutes or until it's the consistency you want. Remove from heat and add cinnamon and sugar. Stir well, serve hot.

I loved it. Max and Riley were kind of "eh" about it. For breakfast tomorrow, I'm going to make some of the red quinoa mixed with the white mixed with dried bananas. Omnomnomnom! :mmm:

Meri you treat it like you would rice. Most of it just jacks up your blood sugar via the heavy carb load but it has a (meagre) whole amino acid profile going for it. As to whether it's some sort of wonder food, eh, it's better than almost all of the "food" sold wrapped in a box in the middle aisels of your local supermarket.

I would just concentrate on eating mostly meat and vegetables drenched in real butter/olive oil/animal fat when I'm hungry with no snacking inbetween. Comes to about 2 large meals a day.
