Ok, first of all I am not familiar with classification of different types of "metal" music, so maybe what I am looking for is not strictly "heavy metal". Still, since we have a number of metalheads here, I thought I'd ask for a recommendation.
So, I am generally not too fond of metal music per se, however there is a particular type I like, which I'd call "symphonic" or "operatic" metal. It has the requisite metal bass quitar, but also uses diverse vocals (choruses, as well as male and female solos, as opposed to some guy just going RAWRAWRAWR), classical instruments (especially bass, but also other string instruments or piano) and usually has a distinct melodic line. The best example I can mention of this type of music are two albums by Therion (I don't really care for their earlier work): "Vovin" and "Deggial", especially pieces like "The Rise of Sodom and Gomorrah", "Emerald Crown", "Raven of Dispersion", "Via Nocturna", "Eternal Return" etc. Some pieces by Lacuna Coil also sound like that.
What else is out there that is like this kind of music?

No, it's a twenty person ensemble playing original songs. Their albums oftenf eature original classical interludes, too.

Overal, I'd think you may enjoy some of the goth metal bands out there, a number of which have female vocals and vampire themes.
I especially recommend Sirenia.

Sounds like "Gothenburg" metal/rock is what you're looking for, really. Lacuna Coil and Leaves Eyes would probably fit the bill for you. Kamelot is somewhat lacking in female counterparts, but Roy Khan is operatically trained and they come up with some interesting arrangements. In an offshoot of that, you might want to try out some actual "opera metal," where Epica is a good place to start.

Try Metallica, Mart. Though not orchestral, construction of their songs is very much like classical music. They did do a live album with a symphony orchestra, but I disapprove of that kind of thing. Check out "One" on YouTube.

Hey, I listened to a fair bit of metal in my "occult" phase. I've just never got into the subculture because I was annoyed by an average metalhead's lack of erudition.
I mean, a lot of these bands chose names and titles for their songs from occultism or mythology (Therion, Morgoth, etc.), lyrics were often referring to occult or mystical concepts but their fans were completely clueless about it. Gnngh. :frusty:

Actually, the latest four albums are pretty solid: Karma, Epica, The Black Halo, and Ghost Opera. Before that, it's pretty sketchy, though. Siege Perilous is nigh unlistenable, probably since it was mostly written with the former vocalist, Marc Vanderbilt.
I want to see the Anvil movie. it's a RL version of Spinal Tap, about a band that ... never quite "made" it.

A natural progression from Zeppelin and pre-Wall Pink Floyd, they are simply the most consistent progressive metal band recording today. Drawing on concepts as varied as mathematical formulas and Jungian theory to themes of strength from pain, they are as powerful as you will find in the entire "metal" genre.

Tool is freaking awesome; Undertow has gotten more play in my CD player than any other CD over the past week, and Lateralus is awesome as well.
I'm listening to Black Clouds and Silver Linings as we speak- they haven't quite shaken the slapdash techno-metal misstep from Systematic Chaos, but the writing is much more solid; there's nothing as bad as, say, The Dark Eternal Night on it.

Try Adagio. The last albums have some growling vocals (not much). They're a but like a darker version of Symphony X. Though prog metal is not exactly what you described try it.
