First you have to decide which kinf of paella you want to make, the "authentic" one or the seafood version. ;) You seem to be doing a mix of both.
I've only ever had sangria or red Rioja with paella... but I've only actually had paella 2 or 3 times.

The one with no peppers.

I'll cut on chicken and will go for the seafood one: mariscos!
I'll add some squids
this calls for a white wine

Take away the chorizo as well, it has no purpose on paella.
Diet Dr. Pepper goes with everything. :)
Heretic! Chorizo goes with everything!

Never in my whole life I've seen chorizo used for paella.
Then again I'm no big fan of the one you see in most places, it's bland generic crap. But the real stuff is... :mmm:
So get me the real recipe then, I wanna shock (in a positive way) my guests :P

The real deal has peppers.
What kind of so-called Italian doesn't like peppers?
Now seriously, there are three main kinds of paella, the traditional one, which comes from the Valencian countryside and has no seafood, rabbit meat, chicken and vegetables (beans, tomatoes, artichokes, peppers), the seafood version, which comes from the coastal area of Valencia, and includes seafood instead of rabbit, chicken and beans, and a mixed version that was developed as it spread all over Spain, which mixes both versions and may include other stuff.

Does the seafood one traditionally omit tomatoes?

I understood it as "seafood instead of (each of) rabbit, chicken and beans", not "seafood instead of rabbit; and then chicken and beans".
This means the seafood one includes seafood, tomatoes, artichokes and peppers.

The reason I ask is that most seafood paella recipes I see don't have tomatoes, so I was wondering if the lack was traditional or not.
what's the scope of paella if not helping you cleaning your fridge of the week's leftovers?
...I went with the all-in recipe and it was excellent :showoff:
For the wine, we had a humongous bowl of sangria and some nice kerner (dry, aromatic white wine) from Sudtirol
