If someone refuses to respect rank in an interview, they are unlikely to do so when they become an employee.  People tend to be on their best behavior in an interview.  I don't really think it's a good idea to being someone onboard who is disrespectful to you, because there's a good chance they'll be disrespectful to your boss as well and that may reflect poorly on your judgment.

Heh, ok.  Yeah, I wouldn't recommend that either.  I've had people do that and it made me uncomfortable.
