I would have to know what collard greens and grits are to adequately respond.  I have learned that Wiki may not be the best source for that information.

Collared greens are leafy vegetable similar to kale.

They are commonly cooked with the ham hocks or fatback (for flavoring), some onions, salt, pepper and vinegar, till they have a consistency similar to cooked spinach.

Pretty much. The end result is like really, really bitter spinach. You need loads of salt to make them edible.
