I am just going by the wiki article I was pointed to in response to my query about Chitlins.

Did you look up the wiki article on Soul Food? If a wiki article said that sockeye is a salmon would you think that sockeye is the only kind of salmon?

If I found an article that said that Sockeye "is" Salmon I would edit the article to say that Sockeye is one of many types of Salmon.  Since the article said that Chitlens "is" soul food rather then say it is a type of soul food I concluded, using the normal rules of grammatical consutruction that I did not wish to eat soul food because I did not wish to eat Chitlins.
