This is a misconception - apparently, most pedophiles do not care about gender when it comes to kids - his true sexuality would be based on the gender of the adult partners he fucks.

I don't think you can say most.  Some pedophiles care only for one sex or the other in children, others do not.  Some peophiles are also attracted to adults, others do not.

I won't touch whether a male pedophile that has an exclusive interest in young boys should be called gay.
