The sear and the spices are supposed to compliment the taste of the meat, not be the only source of flavour.
I agree that if you cook beef to well done, all you're going to taste is any spices or sauces you put on.
Well, I don't like raw meat.  Besides, human intelligence got an evolutionnary boost once it left raw meat behind and switched to cooked food.  It's much easier to digest, leaving more energy to develop your brain.

I don't know how much an effect it has on one lifespan, but I'm not taking any chances :P
I don't do meditation.  I drink alcohol to relax, like normal people.

do you not like sushi? I don't know why you're concentrating on the raw part. if you don't like the taste, that's one thing. I don't care how people eat their food. whatever floats there boat. But, if you get well done at most restaurants you're eating the steak they put aside when they overcooked a previous order, FYI.

I do eat medium stakes occasionally, but the slightly more juicy texture/taste usually does not compensate for chewing on half-cooked meat like the past million years of evolution never happened.

A high quality steak cooked to medium rare doesn't take much chewing.
The medievals were only too right in taking nolo episcopari as the best reason a man could give to others for making him a bishop. Give me a king whose chief interest in life is stamps, railways, or race-horses; and who has the power to sack his Vizier (or whatever you care to call him) if he does not like the cut of his trousers.

Government is an abstract noun meaning the art and process of governing and it should be an offence to write it with a capital G or so as to refer to people.

I don't like sushi.

And yeah I just like the taste of well done, overall.

And if you are worried about what they do in restaurant kitchens, I'd suggest not going to any of them, trust me :D Best way is to not care as long as the food looks and tastes good.

I used to be like Tam. I used to be confused and thought that if a steak was cooked medium or under, it was probably a mistake. Then I had a medium rare steak and became enlightened. I've never gone back.

It is ok to be misled by popular trends. Meanwhile, I'll just eat steak the best way, thanks.

There is a very big difference between rare and raw.  The texture is quite different when cooked to a nice medium-rare.

A properly cooked medium-rare is tender, juicy and flavorful. It preserves most of the steak's qualities while making it comfortably edible (aka, not chewy or hard). People are entitled to their taste, but it's objectively the best way to prepare a steak.

. But, then, Tamas also admits he doesn't like sushi.  I think his palate never developed beyond childhood.  Probably puts ketchup on a hot dog.

How is liking steak cooked properly an issue of insecurity?

There is a spectrum between raw and charcoal. The right point that maximizes flavor and texture lies on that spectrum somewhere, and is subjective.

But there is no question that said point lies somewhere between "rare" and "medium".

You can objectively measure the decline in moisture, flavor, and increase in toughness once you go past medium.

There is nothing emotional about this - people who like their steak medium-well or more done are provably inferior as human beings.
