Missed this post earlier.  I make Cincinnati chili all the time, and we have Cincinnati-style chili parlors down here too... there's one right by my office.

When I make it I used canned crushed tomatoes.  But Cincinnati chili is a little bit sweet, so when I make it I put brown sugar in it anyway.

I prefer my chilli excessively spicy and not sweet, so I guess I'm doing it wrong :D

Cincinnati chili definitely isn't spicy.  It is kind of like Greek spaghetti on steroids.  I flavor it with sugar, chocolate, cinnamon, cloves, allspice, cumin, chili powder, black pepper, apple cider vinegar, Worcestershire sauce, and garlic.  No onion in the chili itself, but it gets topped with chopped raw red onion, cheese, and kidney beans.

Drastically cutting back on the amount of cheese I eat, way to much saturated fat for my age.

Peanuts are providing a good alternative, though harder to work into some meals.
