Oh I should admit that I personally don't chill whine but I saw an article lately (gay mag) that suggested it was a fine idea.

I don't drink wine as I've the sophistication of a neanderthal, but the rule of thumb I have heard and would go by is:
White wine: chilled, take out of the ice/refrig 15 minutes before serving.
Red wine: not chilled, but put on ice/in refrig 15 minutes before serving
I haven't heard a rule on the mongrel hybrids like Rose, or White Zinfindel.

I'm told at the Wine Society that its best served at cellar temp. around 65 degrees or so. I generally don't bother unless its extremely hot and the wine's warmed up too much. Red wine at 70 or so is fine. Wine at 80 degrees is just blekth.

I've never actually made any myself, but I think I might do so this weekend. I know it's pretty easy, and I've got plenty of red wine (~30 bottles) and hard liquor with which to spike it.

I saw one recipe recently that would make a sangria that must be 150 proof. A little too strong for me. I like to use Spanish red wine and brandy. Maybe some fizzing soder for sparkling effect.

Just below room temp is a good service temp.
The cooler the wine is served, the sharper the tannins will be. Which is why Beaujolais (which lacks any significant tannin) is often served somewhat chilled. Try that with a big Syrah or Cab and the results will not be as good.

I'll make Sangria, but I don't usually chill red wine. My favorite Sangria comes from one of Dianne Kennedy's books; it involves:
1 bottle Red wine
Juice of 1 Lemon
1 lb. watermellon
1 Tb vanilla
Blend the watermelon, vanilla and lemon juice in a blender, add red wine and enjoy.
That is why I won't recommend Cal to be a Kentucky Colonel. Hispanic? Ferrigner ways. <_<

The closest liquor store to my new place though has a SHITLOAD of wines. Seriously, like half the store is wine, and they stack that shit to the ceiling. And man, the people who shop there are rich as fuck. Earlier, when I was picking up my weekly bottle of whiskey, I briefly chatted with some Russian (I guess) woman slathered in makeup who I think had lip implants who was putting vodka into a shopping cart. Bitch had about $700 worth of booze in there, enough to keep my entire fraternity drunk for a week. And it wasn't the cheap shit either.. everything I saw was top-shelf, and most of that was vodka.
In retrospect, I should have pounced on that cougar. :(

Weissbier is OK, but for some reason it makes me burp too much for comfort when sitting on the balcony reading. I prefer barley based beer, there. Since you tend to drink early in the day, there's no room for that DIPA or barley wine, naturally.

I keep my red wine in a cellar which keeps it at a nice cool temperature.
If I didnt have that I would put it in the fridge prior to serving to cool it if needed.

Good point. For those of us who don't have a cellar, it's usually necessary to chill it.
Fun fact (which I may have mentioned before): when aa and I moved to NC, we stocked up big time on wine, because there were some West Virginia wines that I liked that I knew I couldn't get down here, and the while the stuff aa likes is available here, it's considerably more expensive than it is in WV.
Unfortunately, all our WV wine is gone now, except for some blueberry wine ( :x) that aa picked out for some reason.
