Frankly, I don't see what the pork craze is about. I don't think pork is particulary tasty per se.
I'm slowly starting to enjoy pork.  I think it got ruined for me because when I was a kid the only pork I ever remember eating was ridiculously over-cooked - at the time I just thought I didn't like it.

They have Spam with bacon in it now.

Turkey is the best. In fact, the turkey is proof that God exists and that he loves us. Tastiness is not a trait that would be favored by natural selection, and so therefore the existence of the turkey must require divine intervention. Divine, tasty, delicious intervention.

That was only true until man discovered: Animal Husbandry.

Pig, cow, creatures of the sea.

Chicken needs some advocacy.  The culinary achievement of fried chicken alone guarantees an esteemed place for the chicken, not to mention delicious roasted and rotisserie chicken, and chicken salad.

I've been reflecting on the pork craze, and came to realize that all the pork stuff I like is, basically, processed in some way or another, and the one I don't like so much is more or less "pure" meat, which has lead me to conclude that pork is great as base meat for processing, but not so much to eat as it is.

Pork loins and pork chops make mighty fine eating just plain.

Caliga

Not sure what exactly you mean by processing, but pulled pork:

Larch is teh goofy.  Pork's fine pure; it's just not a meat that you can simply stick in the oven and bake.  Broiled pork chops, though, I don't even need a marinade for (although I'm fond of marinating them and then basting in sesame teriyaki).

I also happen to like straight-up pork better than straight-up either beef or chicken (fried chicken is okay, but I get sick of it pretty quickly).

Voted pig, cow, and sheep.  I would have included deer in the mix but venison SUCKS if it's not prepared well.... not as true with the others.

I didn't vote for deer for the same reason.  Yeah, it's possible to screw up anything when cooking it, but venison is much easier to screw up than beef.

BuddhaRhubarb

Actually the best meats of any variety I've ever had have all been from Animals that were slaughtered in not quite a brutal way as most. - Organic free range  beef, chicken, pork.

I do like lamb occasionally, and fish? well fish is like a whole other world of meat. there is too much variety to put it all in one camp. but my favorite sea creatures to eat are Atlantic Salmon, Pacific Salmon, scallops, lobster, shrimp, in that order...

I was thinking about the pig thing too.  I rate sausages over bacon and with pork itself I like fatty slow cooked stuff like pork belly :mmm:

I love sausages more than life itself, but I felt the need to cut down after finding out how carcinogenic they are.   :(  I can only court so many cancers with one body.

I bought a can of Spam with bacon today, and tried it. Sliced thin and fried on toasted bread with Miracle Whip.
