Dark Souls

My go to person for that is Keith Ballard who's played through the Soulsborne games in a pretty chill, relaxed fashion. He does a lot of exploring, in general, and he doesn't edit out too much (except when he has to repeat content extensively because he died, or fights a boss for 3 hours). He does a lot of soulslikes - here's is his collected playlists for that:

(He does other games, too, though.)

His reading lore texts is a bit tedious, because he sometimes misses obvious stuff, or stumbles over the words a lot, but I find his videos perfect for having on in the background, and the episode length is bearable (usually 20-40 minutes).

I think his Dark Souls II - Scholar of the First Sin and Bloodborne playthroughs are good starting points to see if you like his style.

I recommend people check him out - one of the most chill streamers, with a soothing voice - perfect for background viewing/lurking. :)

To keep things manageable, he only did the mandatory story bosses (so no DLC bosses).

I guess the next challenge will be to run all bosses hitless, or adding Sekiro to the mix.

I like the Souls games, but this seems like insane obsession. :D
