I remember reading as a child about range wars back in the 1860s-80s. The cattlemen and the shepherds did not get on with shared land for obvious reasons. Not sure how important that actually was  though.

According to wiki USA sheep peaked in 1881 at 51m and have declined ever since to only 6m today. UK has about 23m for comparison.

There is some kind of rule in the US that, seafood aside, you are only to eat cows, pigs, and chickens. Any other choices are highly suspect and likely to get you picked up by the CIA as a potential foreign spy.

Huh.  Turkey dinners and lamb chops are against American rules?  CIA must be busy!

Mutton has a strong taste, what most would consider gamey. Lamb is better. If you want to go with another bovidae besides cow go for with goat. Lean meat, not as gamey as sheep

Roast lamb done to a perfect medium rare is amazing.  Problem is it is hard to get it done to perfection.  When you find a place that can do it, or even better if you have the skill to nail it at home, you have a little piece of heaven.  It is the thing I miss most since going vegan.

I had a point that I was making a joke about, am I wrong though? We have a pretty narrow band of types of animals we consume.

I think that mutton, goat, and horse meat became associated with poverty in the US.
